As a rule, I cook for my family “from scratch” every night and we always sit down together at the table and share quality time. Our lives are very hectic so this time is very important to all of us. And since I have the luxury of working from home, I have the time to cook. And I love to cook! They love my cooking! It works out fabulously!
Monday was chicken wings with homemade BBQ sauce. Tuesday was steak fajitas with beans and rice. Wednesday was spaghetti with homemade sauce and meatballs. Thursday was sausage with peppers and onions, fried okra, and corn. This is the typical week. Friday should be homemade pizza night, but sometimes I just don’t feel like cooking! It really doesn’t happen often, but on those occasions that it does, I’m always on the lookout for products that I can keep in the freezer in a pinch.
Further to the above statement, it should be noted that Bubby did not eat a single one of those meals. He’s even pickier than I am (which is quite an accomplishment). He instead ate things like chicken nuggets, Fruit Loops, peanut butter and jelly sandwich minus the bread (that’s right, I actually fix him the sandwich and he just licks out the middle and throws away the bread). One night I do believe he only ate fruit snacks because that’s all I could get him to eat. So again, finding alternatives to keep on hand is very important to me.
With this said, I have been hearing some pretty positive banter about the brand new Tyson Mini Chicken Sandwichesand thought I’d like to give them a try. Maybe even Bubby would eat these. I’d looked at my local island Walmart and they didn’t have them. So I asked around and found out that they don’t carry these yet at all Walmart locations. But I wanted to find them so I searched Tyson Goodness Locationsand found a store that carries them conveniently located on B’s way home from work! SCORE!
Of course I made him stop on his way here! I really didn’t feel like cooking and I figured this was something everyone would like. I had other quick sides so these would be perfect!
As soon as he got home, I started prepping for our quick (and super duper easy) meal! Bubby was so excited to be having chicken for dinner, with french fries no less! This would be a good night for sure!
I must admit, I was a little (lot) concerned about cooking these sandwiches in the microwave. I’ve tried this before with other like products and we either get soggy or hard bread. But honestly, I followed the directions and the bread was fresh and soft, and the chicken was cooked perfectly. Again with the SCORE! So dinner was ready. Tyson Mini Chicken Sandwiches, mozzarella sticks, and french fries. And the whole meal took me less than 10 minutes!
KIDS….time for dinner!
You know I’m always honest with you so I must admit, Bubby did NOT like the bread (ummm…DUH…see earlier PB&J discussion), but he did love the BIG chicken nuggets brought to him by Tyson! I’m going to keep trying with the bread and maybe someday he’ll play along!
Princess Bug (why yes, that is a tiara on her head even though it’s hard to see) loved them! She is tiny and loved that they fit her little hands and were so very yummy with just ketchup! She is the best eater in the world! Seriously I have never met a kid that eats better than she does!
And when B got home from his run, I was able to toss a couple more Tyson Mini Chicken Sandwiches in the microwave and cook them up in just over a minute and a half! How cool is that? I love watching my family sit down for quality time, talking, laughing, and enjoying meals they love! Another favorite!
And as an added bonus, clean up was as quick and easy as the meal! Plenty of time for me to run out to our local Walmart to buy the rest of the grocery items we needed and even a Big Boy Bed for Bubby! This was a good night indeed!

We will be keeping these in our freezer from now on! Will you? They are Bug’s new favorite. I seriously had to fix them for her again tonight at her request! Two nights in a row? This is awesome! A mom could get used to this!
