The great folks at Nature Valley sent me some of their newest products to try and challenged me to create a recipe in exchange for this post. This healthy family meal did not disappoint. As always, all opinions, ideas, and photos are entirely my own.
I know I’m always talking about healthy meals and recipes and I stand by 100% of what I say 99% of the time. Low sodium, low carbs, low sugars, no frying. Except…on Sundays…sometimes I break my own rules (within limits) and whip up something out of the norm. Everyone deserves to splurge and my family is no exception. So, Sunday I fried food. Yup, me. I fried food. Of course I used olive oil and other healthy ingredients. Plus I pumped high proteins and fiber into our family meal. I think that scores as a healthy meal and they loved it. This great, sweet, flavorful twist on fried chicken will leave your family asking for more, and more, and more, and more. And of all things…Nature Valley Granola was the secret ingredient!
We live in the south. Fried chicken is a family favorite but I was looking for a healthier spin and this challenge made it easy for me. Granola crusted fried chicken. Yes, it’s a thing…now…and they loved it. The sweet protein-packed, high-fiber taste of the granola paired with the fried goodness was a hit. I only used high-quality, healthy ingredients to make this meal a success, and a new family favorite.
Yes, the secret’s in the breading and this amazing combo was simple, delicious, and I slipped that fiber into their meal without a hitch. With granola. The Nature Valley Cranberry Almond and Oats ‘n Honey Protein Crunchy Granola packs 10 grams of protein, 2 grams of fiber, and only 140 mg of sodium into this delicious dish. Plus the flavor combination? Have I mentioned that? I actually ground the granola in my Ninja (you aren’t surprised) and mixed it with some flour so it would stick better to the chicken. I used an egg white mixture and it was on!
Set up your prep station with the chicken, egg whites, and the granola coating while you heat the oil and dinner is a snap. While you’re at it, chill some cranberry sauce (I actually use canned for that…read the label, it’s not that bad), cook some mashed potatoes and gravy, and get your chicken fry on!
Simplicity at its finest and the sweet aroma from the granola fills the house. Added bonus.
Like I said, this was a huge hit at our house and is a great twist on an old-fashioned favorite. You won’t believe how easy this is to make and you can ditch all of the added spices you usually have to add to fried chicken because the Nature Valley Granola gives it all of the flavor that you’ll need. This recipe is a keeper and will be in our weekly rotation.
