What is that you ask? Is it a Chicken Pot Pie? Is it some sort of Shepherd’s Pie? Well, the answer to those questions is basically yes. This was dinner last night and it was amazing (so I’m told since we all know I’m a vegetarian).
The best recipes often happen when you run out of groceries. You start scrounging around in the pantry and refrigerator in a ditch effort to avoid the crowded grocery store or *E-GADS* Walmart before dinner. And luckily, last night, I found a jackpot in every corner.
I had roasted two Tyson whole fryers for Easter and although my whole family loves them, I always have left over chicken. There was a bowl full. In the pantry was a can of green beans and a can of corn. In the crisper were 2 carrots left over from my juicing. A few potato flakes, a can of low sodium Cream of Chicken soup, and a 1/4 of a bag of shredded cheese later, and I had a plan (that didn’t involve fighting the crowds at Walmart).
- Slice and saute 2 carrots until tender
- Shred the Tyson Chicken and toss it in a mixing bowl
- Pour in 1 can of low sodium cream of chicken Soup
- Drain 1 can of no salt added corn and dump that in the bowl
- Drain 1 can of no salt added cut green beans and dump them in the bowl
- Dump the cooked carrots in the same bowl and mix all ingredients together
- Spread everything out in your 9×9 Pyrex bowl
- Prepare 4 servings of mashed potato flakes according to package instructions (I’m totally lazy and use the microwave for this)
- Spread the prepared mashed potatoes over the chicken and veggie mixture
- Sprinkle with a thin layer of shredded cheese
- Cover with tin foil and heat in the oven for about 15 minutes
- Take the foil off and continue baking in the oven for about 5-7 minutes, just until the cheese browns nicely
- Spoon out, serve, and eat
This is such a simple recipe that literally takes about 30 minutes to make. It would be even quicker if you had leftover mashed potatoes and cooked carrots. My family scarfed this up. I mean seriously devoured it and raved the whole time (yuck…no one should ever talk with their mouth full). It’s going on my regular rotation. I’m sure this isn’t a total original or anything but from now on in my house, we shall call this Chicken Pie a la Christy. I like the ring of it.
