Be a STAR with Bacon-Wrapped Smoked Pork Tenderloin in Olive Oil

The holidays are upon us and that means huge meals filled with fabulous foods that we all love. But really, do we need an excuse like the holidays to have delicious meals and together time? I think NOT! We live in Texas. That means we grill out all of the time. All year long. And huge weekend meals are a big thing for us. The time of the year doesn’t matter. The occasion doesn’t matter. It’s all about together time…and food! And, just so you know, STAR Olive Oil makes all foods better, on or off the grill!

Good food, good meals, start with good ingredients. You can’t smoke a dry tenderloin right? And you can’t cook it without seasonings either. Be sure to buy a high quality cut pork tenderloin, slather it with STAR Hojiblanca Extra Virgin Olive Oil, then coat it in your rub of choice. Wrap it in bacon (because bacon makes everything better), and top it with fresh jalapenos if you can handle the heat. Then one more coating of the STAR Olive Oil to lock in the juices and ensure that your meat is tender after smoking for 4 hours on the grill. 
If you like the heat, wrap it up in tin foil and set it on the grill like this!
If you don’t like the heat, leave off the jalapenos before wrapping in tin foil. Your choice, but if you leave off the peppers, obviously you’re not from Texas. 
While that 4 hour tenderloin is slowly smoking on the grill, you can throw together some Twice Baked Potatoes. 

What you’ll need:
  • 4 tbsp STAR Arbequina Extra Virgin Olive Oil
  • 4 large baking potatoes
  • Mrs. Dash Garlic & Herb Seasoning
  • 4 tbsp no-salt butter
  • 1/3 cup sour cream
  • 1/2 cup shredded cheese of choice
  • Optional: bacon and chopped up green onions

What you’ll do: Lay out 4 pieces of tin foil. Drizzle each potato with the Olive Oil, then sprinkle on some Mrs. Dash Garlic & Herb seasoning mix and wrap the potatoes in the foil. Bake them in the oven at 425 degrees for an hour and a half. Remove the potatoes and let them cool enough to handle, scrape out the inside of the potato and mash that in a bowl. Add the butter, sour cream, and shredded cheese into the “mashed” potatoes and mix well. Heap the seasoned potato skins with the mashed potato mixture, add bacon or green onions if you’d like, then cook in the oven in a baking dish uncovered at 400 degrees for 30 minutes.
And you can whip up a fun dessert while you wait. For these funky turkey cupcakes, I just used a boxed angel food cake mix, frosted, added some caramel cups for the heads, and Mike & Ike candies for beaks, wings, and feathers. The kids loved them and I can’t believe I’m baking these days (even if it is from a box)!

The STAR Olive Oils come in 3 amazing and unique varieties. They have recommended uses on the front of the label but feel free to experiment with the flavor combinations like we did. I decided the oil that was recommended for poultry or fish made the perfect complement to my Balsamic Vinaigrette Dressing.
