Start Their Day with Peanut Butter and Cheerios Breakfast Bars

How do you start your day off right? They say that breakfast is the most important meal of the day, but I say starting your morning off right in all ways is super important. We have a hard time here in the mornings. Bug doesn’t want to get up, Bubby doesn’t want to eat anything (hello pickiest eater on the planet), and I just don’t want to fight with either of them. But with the help of Honey Nut Cheerios and the new upbeat song from Usher, “Clueless”, our days are getting off to a positive start lately. Good food plus good music to start our day? Yes, please and thank you!

This little guy right here is literally the pickiest eater on the planet. Oh, I know, you think your kid is, but you’d be wrong. He’d rather starve, like his momma, than eat something he doesn’t like (which is almost everything). But I can’t send him to school on an empty stomach so I had to get creative. Protein and fiber are important. They keep us balanced and energized throughout the day. And thankfully, I came up with a recipe with just the right sweetness that my baby loves that also delivers the protein and fiber he needs. Crunching on these Peanut Butter and Cheerios Breakfast Bars while listening to upbeat music are the ticket to the start of a productive day.

Want to make these for your picky eater? This recipe couldn’t be simpler (seriously, if I make anything that resembles baking, it’s bound to be easy). The first thing you’ll need to do is head to your local Walmart to pick up a box of Honey Nut Cheerios. Peanut Butter and Cheerios Breakfast Bars
Recipe type: Breakfast
  • 3½ cups Honey Nut Cheerios
  • 1½ cups creamy peanut butter (I make my own to reduce sugar and sodium but you can use store bought as well.)
  • ¼ cup no salt butter
  • 1 tsp vanilla extract
  • ⅓ cup light corn syrup
  • 2 cups peanut butter chips
  1. Place Cheerios in a large bowl.
  2. Line an 8×8 glass baking dish with waxed paper.
  3. In a medium pan, combine peanut butter, corn syrup, and butter and heat over low heat until melted, stirring regularly.
  4. Remove from heat and stir in the vanilla extract then pour over the Cheerios and mix well.
  5. Place the Cheerios mixture in the prepared pan and press to flatten.
  6. Preheat oven to 350 degrees.
  7. Sprinkle peanut butter chips over the bars and bake in the oven for 3-5 minute until the chips look “melty”.
  8. Remove from oven and spread melted chips evenly with a spoon like a frosting.
  9. Chill covered on the countertop for 4 hours.
  10. Remove from pan and cut into bars.
  11. Store uneaten bars in an airtight container in the refrigerator to be enjoyed throughout the week.

The Biggest Plate O’ Carbs EVER…I Should Be Ashamed

That was my dinner tonight. I should be ashamed. You see, around here we watch carbs, fats, sodium…you name it, we watch it. I only cook healthy foods because I want my family to stay healthy. And truth be known, I really don’t eat much at all. 
By “much at all” I mean, maybe once a day, and sometimes that’s only crackers or something of the sort. It’s not like I diet. That’s just my lifestyle and although that in itself is not healthy, it’s how I’ve lived for the past 40+ years. But every once in a while, like every 6 months or so, I get hungry. I mean HUNGRY! And I break the mold. 
Tonight was one of those nights. I have no clue what triggers these events but tonight I had the biggest plate o’ carbs and I should be ashamed, but I’m not. Obviously I’m not since I’m sharing it with you here. 
I made Potatoes O’Brien a la Christy. I do not recommend this recipe for health reasons but I do recommend it because it is totally yummy! Oh and I didn’t do anything from scratch, which is never healthy, but always fun. 
  • Frozen Ore Ida Potatoes O’Brien from the bag
  • Cook them in butter (OK, it was salt-free butter, I’m not a rebel…ever)
  • While still in the pan, throw on some sliced jalepenos
  • Add Pepper Jack shredded cheese until it melts
  • Slide out on to the plate
  • Slop on some Tapatio Hot Sauce (seriously the best stuff on the planet)
  • Eat like there’s no tomorrow
My dirty secret. But it’s no longer a secret since I shared it with you. I won’t even tell you the carb content, nor the sodium content…because it’s just not pretty. 

And tonight I’m bloated and ashamed. Tomorrow I’ll feel icky for being so dirty. But I’ve fulfilled my twice yearly hunger craving and life is good. It’s OK to live a little every now and again. Stay tuned…next time it will probably be pizza. It’s usually the pizza that I succumb to (and not the good for you homemade, low sodium variety either)

A Healthy Breakfast Should Include A Fabulous Drink! #SilkFruit

We lead a REALLY busy life and I work a lot of hours.  Generally, I spend a lot of time preparing my family’s meals.  It’s important to me that they eat healthy and get all of the nutrients they need, but sometimes that takes longer than my schedule allows.  
Every day is the same.  The hubby gets up at the crack of dawn and his breakfast and lunch have been prepared for him the night before by me while I work. I work late and then get up and work until the babies wake up and then I fix breakfast for them. 
I don’t do an elaborate breakfast on either count.  Usually some sausage or bacon and eggs for the hubby with a blended protein shake sealed up tight and stored in the refrigerator for the morning.  Cereal with soy milk, some fruit on the side, and juice for the babies.  It’s important that they get all of the protein and nutrients that they need, and it’s my job to provide those things.  The other night, I found a healthy short cut!
