How do you start your day off right? They say that breakfast is the most important meal of the day, but I say starting your morning off right in all ways is super important. We have a hard time here in the mornings. Bug doesn’t want to get up, Bubby doesn’t want to eat anything (hello pickiest eater on the planet), and I just don’t want to fight with either of them. But with the help of Honey Nut Cheerios and the new upbeat song from Usher, “Clueless”, our days are getting off to a positive start lately. Good food plus good music to start our day? Yes, please and thank you!

This little guy right here is literally the pickiest eater on the planet. Oh, I know, you think your kid is, but you’d be wrong. He’d rather starve, like his momma, than eat something he doesn’t like (which is almost everything). But I can’t send him to school on an empty stomach so I had to get creative. Protein and fiber are important. They keep us balanced and energized throughout the day. And thankfully, I came up with a recipe with just the right sweetness that my baby loves that also delivers the protein and fiber he needs. Crunching on these Peanut Butter and Cheerios Breakfast Bars while listening to upbeat music are the ticket to the start of a productive day.

Want to make these for your picky eater? This recipe couldn’t be simpler (seriously, if I make anything that resembles baking, it’s bound to be easy). The first thing you’ll need to do is head to your local Walmart to pick up a box of Honey Nut Cheerios. Peanut Butter and Cheerios Breakfast Bars
Recipe type: Breakfast
  • 3½ cups Honey Nut Cheerios
  • 1½ cups creamy peanut butter (I make my own to reduce sugar and sodium but you can use store bought as well.)
  • ¼ cup no salt butter
  • 1 tsp vanilla extract
  • ⅓ cup light corn syrup
  • 2 cups peanut butter chips
  1. Place Cheerios in a large bowl.
  2. Line an 8×8 glass baking dish with waxed paper.
  3. In a medium pan, combine peanut butter, corn syrup, and butter and heat over low heat until melted, stirring regularly.
  4. Remove from heat and stir in the vanilla extract then pour over the Cheerios and mix well.
  5. Place the Cheerios mixture in the prepared pan and press to flatten.
  6. Preheat oven to 350 degrees.
  7. Sprinkle peanut butter chips over the bars and bake in the oven for 3-5 minute until the chips look “melty”.
  8. Remove from oven and spread melted chips evenly with a spoon like a frosting.
  9. Chill covered on the countertop for 4 hours.
  10. Remove from pan and cut into bars.
  11. Store uneaten bars in an airtight container in the refrigerator to be enjoyed throughout the week.

I want my family to start their day out right, but I’m not about getting up early and fixing them a high-protein breakfast. I’m not about getting up in the morning at all really so it’s important for me to plan ahead by making their breakfast the night before, sometimes for the whole week. B and Bug love a hearty sausage breakfast so for more reasons than one, I turn to Wright Brand Sausage as the base for most of their breakfast dishes.

But first, let’s just go ahead and address the elephant in the room, shall we?


I’m always preaching low/no sodium I know so why, oh why would I be feeding my family sausage? Well, the truth of the matter is that the body needs sodium for healthy living. In moderation of course. It is healthy as long as you use proper guidelines. And so I add it to my family’s diet on a daily basis, in moderation, typically at breakfast. My family LOVES sausage, and bacon, and I’ve found that the lowest sodium brand that my local stores carry is Wright Brand (seriously, it has less sodium than the packages that are labeled lower sodium). Obviously they think it’s important too and there’s no need to label it because you can just read it on the back. Plus it’s Texas home grown, so that’s a plus too!

Like I said, I love for them to start their days with a well-balanced meal (and toaster pastries or cereals just don’t cut it), so I plan ahead. The right breakfast starts with the right ingredients and I like to include their protein, fruits, veggies, and dairy. But I am NOT doing that in the morning. I make breakfast at night, after dinner, and I package it up so they can heat and eat in the morning. Sometimes I make just enough for the next morning, sometimes (like this time), I make enough for the entire week because that makes it easier on me. I’m all about making things easy on me. I’m busy. I deserve this!

For this week’s breakfast menu plan, I made Sausage, Egg, Potato, and Cheese Tacos and Breakfast Bowls (same recipe, one with a corn tortilla, one in a bowl, because I’m smart like that) and Sausage Kolaches. I made homemade Pico de Gallo to keep on hand for the family members that like that spicy kick to their breakfast foods plus amazing smoothies packed with calcium and fruit. All of this in less than an hour. Breakfast is served, each and every morning, from my microwave, while I guzzle coffee.

For the Wright Sausage, Egg, and Potato Tacos or Breakfast Bowls, you’ll need:

  • Wright Brand Ground Sausage
  • 6 eggs (beaten)
  • 1/4 cup 2% milk 
  • 2 medium white potatoes, cut in 1 inch cubes
  • 2 green onions (just the white part, sliced)
  • 1 bell pepper, chopped (we use the orange but green or red work too)
  • 1/2 cup shredded cheese
  • Pico de Gallo (optional)

Cook ground sausage thoroughly, drain and set aside. Fry cubed potatoes until almost tender, then add bell pepper and green onion and continue frying until all are tender. Beat eggs, mix in milk, and cook to the consistency you prefer. Mix all cooked components together. Serve either in heated soft corn (way less sodium than flour) tortillas or in a bowl sprinkled with cheese.

*This mixture stores in the refrigerator well so you can just cook it the night before, place it in an air tight bowl, then reheat it in the morning for your quick breakfast.

 My version of Kolaches (a Texas favorite) is super simple:

  • Wright Brand Sausage Links
  • 1 roll of refrigerated crescent rolls

Simply cook the sausage links on the stove top until about half way done (about 10 minutes over a low heat). Wrap them in the crescent rolls. Heat in oven according to crescent roll package instructions (mine were at 375 for 13 minutes).

Our current favorite is a delicious strawberry, banana blend. Just a banana, 5 strawberries, 2 packets of sweetener, 1/4 cup milk, 6 ice cubes, and blend. Delicious and completes any breakfast (or lunch or dinner for that matter).

It’s really easy to start your family’s day off right with the perfect breakfast, as long as you plan ahead. You don’t have to be a morning person to fix a great meal in the mornings. Ditch the toaster pastries and cereal and start their day off with a high-protein, delicious breakfast that will leave them feeling full and satisfied until lunch time.
